Serves 4-6

Cooking time: 30 minutes


1 small onion

1 medium carrot (about ½ cup, grated)

450g zucchini (about 3 cups, grated)

3 tablespoons of grated tasty cheese (goats cheese is quit good to)

3 eggs

½ cup vegetable oil

1 cup self raising flour

salt and pepper to taste


Step 1: Get ready! Preheat oven to 180 degrees and lightly grease a tin with a bit of butter and line it with baking paper.

Step 2: Finely chop the onion. Grate the carrot, zucchini and cheese.

Step 3: In a bowl, put everything in and mix.

Step 4: Place mixture in the lined tin and back for 25-30 minutes, until lightly brown.
