Ingredients
4 eggs (beaten)
3/4 cup castor sugar
1/2 cup lemon juice
3 teaspoons grated lemon rind
125gm butter
Method
1 – Combine all ingredients in top of a double boiler.
2 – Stir continuously until mixture thickens.
3 – Bottle and store in refrigerator.

Notes
– Spread on toast
– Mix with yoghurt
– Dollop onto ice-cream, scones, pancakes or waffles.
– Scoop into little tart shells and top with meringue or whipped cream.
